Vegetables are the category of food least likely to come under suspicion in migraine management. The idea that vegetables could contribute to migraine attacks runs against the grain of conventional nutritional thinking.
For most people with migraine, vegetables are safe and beneficial. If fermented or pickled vegetables are consumed regularly and attack frequency is high, a trial period of avoiding these specific preparations while maintaining the rest of a vegetable-rich diet can reveal whether they are contributing. Cooking method should also be considered. Lightly cooking allium vegetables, choosing fresh over fermented preparations, and consuming legumes promptly after cooking rather than storing them for multiple days are practical modifications that reduce exposure to the specific compounds most relevant to migraine without eliminating these food groups.
