Food doesn't cause migraine the way a pathogen causes an infection — it lowers the neurological threshold for an attack in a brain that's already migraine-prone. Three mechanisms explain most of what's covered in the articles below.
Vasoactive amines. Tyramine and histamine build up in foods as they age, ferment, or are processed — this is the mechanism behind aged cheese, cured meats, and some fruits and vegetables.
Additives. Nitrates and nitrites, used to preserve processed meats, convert to nitric oxide, a vasodilator with a well-established role in migraine. The evidence for other additives is more mixed — MSG in particular has a popular reputation as a trigger that controlled research doesn't support at normal dietary doses, though some individuals may still be personally sensitive to it. Preparation. Fermenting, smoking, and high-heat frying all change a food's chemistry in migraine-relevant ways — the same ingredient can behave differently depending on how it's cooked.
No single food triggers migraine reliably in everyone with the condition, and these mechanisms interact with everything else going on that day — sleep, stress, hormones. That's why identifying your own dietary triggers usually takes systematic tracking rather than a one-time elimination.
